About “Majda” — The Cup That Takes You Back to Grandma’s Table

At Ananas Roastery, when we cupped this coffee for the first time, everyone around the table said the same word: caramel.

A warm flavor, balanced sweetness, and a finish of roasted hazelnut that brings a sense of warmth and comfort—just like gathering at grandma’s house on a Friday.

We didn’t have to think long about the name. The cup itself carried a sense of dignity and grace, so we named it “Majda,” a name that embodies dignity and nobility—exactly what we felt from the very first sip.

What’s the Story Behind “Majda”?

This coffee comes from the La Majada farms in the Apaneca area of Ahuachapán, El Salvador, grown at an altitude of 1,300–1,400 meters above sea level.

The coffee is a blend of several varieties, including Red Bourbon, Catimor, and Pacas. Harvest takes place between November and April.

It is traditionally washed and carefully processed. The cherries are moved daily through the coffee processing stages, then pulped and washed with fresh water from nearby mountain springs. The beans are subsequently sun-dried on traditional raised beds in the patios before being stored in wooden silos, ready for export.

There is patience and precision in every step—and the result is a comforting cup with caramel notes, balanced sweetness, gentle acidity, and roasted hazelnut, carried by a full, lingering body.

Why Did We Choose This Name?

Our grandparents taught us that authentic coffee requires patience: patience in the preparation, patience as the coffee brews over the fire, and patience when welcoming a guest.

When we saw all the care and patience that each “Majda” coffee bean goes through—from harvest all the way to export—we felt the same dignity and grace that we admire in the women of our homes, who have mastered the art of preparing coffee with love.

في محمصة أناناس، لما كوّبنا هالمحصول أول مرة، كل واحد حوالين الطاولة قال نفس الكلمة: كراملة. نكهة دافئة، حلاوة متزنة، وقفلة بندق محمص تحس فيها دفء وراحة زي قعدة عند الجدة يوم الجمعة. ما احتجنا نفكر كثير بالاسم، لأن الكوب نفسه كان يحمل وقار واحترام، فسميناه "ماجدة"، اسم يحمل معنى الكرامة والوقار، بالضبط زي اللي حسينا فيه من أول رشفة.
وش سالفة "ماجدة"؟
المحصول من مزارع لا ماجادا بمنطقة أبيانكا في محافظة أهواتشابان بالسلفادور، على ارتفاع بين 1300 و1400 متر، ومن أكثر من سلالة: بوربون الأحمر، كاتيمور، وباكاس. يُحصد المحصول بين نوفمبر وأبريل، ومعالجته مغسولة بطريقة تقليدية دقيقة: الحبوب تنقل يوميًا من الحزام الذهبي للقهوة، يقشّرونها، يغسلونها بمياه عذبة من عيون الجبال المجاورة، ثم تجفف تحت الشمس على أسرّة تقليدية بالباحات، وأخيرًا تخزن بصوامع خشبية جاهزة للتصدير. صبر ودقة بكل خطوة، والنتيجة كوب بنكهات كراملة وحلاوة متزنة وحموضة ناعمة وبندق محمص، بقوام ممتلئ يفضل بفمك.
ليش سميناها بهالاسم؟
لأن أجدادنا علمونا إن القهوة الأصيلة تحتاج صبر: صبر بالتحضير، وصبر بالدلة على النار، وصبر باستقبال الضيف. ولما شفنا كل هالعناية والصبر اللي تمر فيه حبة "ماجدة" من القطف للتصدير، حسينا فيها نفس الوقار اللي نكبره في نساء بيوتنا اللي يتقنّ صنعة القهوة بحب.
